  • 1 tsp olive oil
  • 8 oz package cooked cajun sausage
  • 3 boneless chicken thighs
  • 1 red onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 3 ribs celery, chopped
  • 1 tbsp minced garlic
  • 1 1/2 cups Basmati rice
  • 1/2 tbsp salt
  • 2 tbsp cajun seasoning
  • 1/2 tsp thyme
  • 1x 14oz can diced fire roasted tomatoes
  • 1 3/4 cup chicken broth
  • 8 oz cooked shrimp, thawed and shells removed

Instructions

Plug in the Instant Pot electric pressure cooker.
 
Chop the onion, green pepper, red pepper, and celery.
 
Slice the cajun sausage and set side.

Cut the chicken thighs into bite sized pieces and set aside.

Select the Instant Pot Saute setting and set to high.
 
Add the olive oil to the pot.
 
Add the chopped chicken thighs to the pot and brown for 3 minutes, stirring frequently so that the chicken does not stick to the pot.
 
Turn the Instant Pot off.
 
Add the chicken broth to the pot.
 
Add the onion, green pepper, celery, garlic, salt, cajun seasoning, and thyme to the pot and stir to combine.
 
Add the rice and the canned tomatoes and stir to combine.
 
Put the lid onto the pot and close to seal.
 
Set the Instant Pot to cook on manual high pressure for 7 minutes.
 
Once the cooking time has finished cooking, let pressure release naturally for 5 minutes, then manually release the remaining pressure.
 
Take the lid off.
 
Add the cooked shrimp and sausage to the pot and stir.

Replace the lid and allow the jambalaya to sit for 5 minutes, in order for the shrimp and sausage to heat.
