I love potatoes. But, I don’t love to peel them. A while back I tried Alexia’s Smart Classics Roasted Tri-Cut Potatoes with Sea Salt. While they aren’t completely peeled, they are already cut into pieces where there isn’t so much skin I don’t want to eat. By themselves these potatoes are very friendly for those that watch nutritional value. And while I know they are intended to be better for you because of the way they’re ready in the package, I couldn’t resist the urge to incorporate them into a casserole. This is a quick and easy, down and dirty casserole that requires almost no prep at all. Everything in it is already ready to go right out of their respective packaging. The resulting casserole is simple and filling. Here’s how I made it.
Easy Ham Cheese And Green Bean Casserole
- 32 oz Alexia Smart Classics Roasted Tri-Cut Potatoes with Sea Salt
- 8 oz sliced deli ham
- 2x 10 oz bags streamable green beans
- 8 oz sour cream
- 6 oz shredded cheddar cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- salt and pepper to taste
Preheat oven to 450 f.
Bake the potatoes for 20 minutes.
Add the seasonings into the sour cream and stir well.
Remove potatoes from oven. Add in the sour cream mixture and 2 oz of shredded cheddar and stir gently.
Place potato mixture back into the baking dish.
Place the green beans into the baking dish over the potatoes.
Place the ham slices on top of the green beans.
Place the remaining 4 oz shredded cheddar cheese on the potatoes.
Bake for 10 minutes.
Serve immediately with salt and pepper to taste.
