15 Minute Meal - Easy Chicken Broccoli Mac & Cheese Recipe - From Val's Kitchen

Sometimes you just have those days where you don’t have a ton of time to pull a meal together. It’s on those days that I really rely on products I keep stock of, like frozen vegetables and pasta. I love broccoli and cheese. I love mac and cheese. I love chicken with cheese. When I was in a pinch the other night trying to decide what to make I decided to make a quick dish that combined all of them together, giving me Easy Chicken Broccoli Mac & Cheese. It doesn’t take long to make, only as long as it takes you to make the pasta. Here’s how to make it.

15 Minute Meal – Easy Chicken Broccoli Mac & Cheese Recipe


  • 2 boxes mac & cheese
  • 9 oz cooked chicken (I used Perdue ShortCuts Italian)
  • 10 oz box frozen chopped broccoli
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • salt and pepper to taste


Make the mac & cheese.

While the mac & cheese is cooking, cook the broccoli in the microwave, which took me 3 minutes.

While the mac & cheese is cooking cut the chicken into small chunks or cubes.

Drain the mac & cheese and make as you usually do but don’t add the milk yet. When you add the cheese powder or packet you’ll also want to add the onion and garlic powder.

Add the chicken and broccoli to the mac & cheese and stir well.

Add the milk and stir well.

Serve immediately with salt and pepper to taste.

That looks crazy delicious! I used to eat broccoli and cheese all of the time, but I’ve never seen it done as a macaroni.

I keep leftover meals frozen in I’m freezer so when I don’t want to cook or have no time to cook I can take them out and savor old favs.
