  • 1 lb beef flank steak, thinly sliced against the grain
  • 2½ cups pineapple chunks
  • 3 scallions, thinly sliced
  • 1 tbsp coconut oil
  • 3 tbsp coconut aminos

Optional

  • sea salt and black pepper, to taste

Instructions

Slice the flank steak as thinly as possible, cutting against the grain.

Slice the pineapple into chunks.

Heat the coconut oil in a large high-sided skillet or wok over high heat.

Add the beef and pineapple to the skillet, seasoning with a small pinch of salt and black pepper if desired.

Stir-fry the beef and pineapple over high heat until the beef is cooked through and the pineapple develops a slight golden color, approximately 2-3 minutes.

Add the coconut aminos to the skillet and stir-fry for another 1-2 minutes, or just until the mixture is warm and bubbly.

Taste and season the mixture with additional salt and black pepper, if desired.

Take the skillet off of the stove and stir in the scallions.

Remove the finished dish and plate immediately.

What are coconut aminos, and can I use something else if I don’t have that ingredient?

Coconut aminos is seasoning sauce made from the fermented sap of coconut palm and sea salt. It is similar in color and consistency to a light soy sauce but has a slightly milder and sweeter flavor. Coconut aminos contains less sodium than typical soy sauace, and is free of gluten, wheat and soy.

If you have tamari on hand you can use that instead of coconut aminos as well. Tamari is a wheat-free Japanese seasoning sauce made from fermented soybeans. It’s richer and slightly less salty than traditional soy sauce.

If you don’t have coconut aminos or tamari then you could use soy sauce if you have it.

Should I serve a side with this dish?

You can serve this dish as is. It also works really well served on a bed of white rice.
