Pressure Cooker Sausage Tortellini is a great me4l for busy nights! This easy recipe needs only 3 ingredients and comes together in less than 30 minutes! The whole family will fall in love with this filling comfort food dish because of the way the tender tortellini gains its flavor from the sauce. Here’s how I make Pressure Cooker Sausage Tortellini.

- 6 qt electric pressure cooker (I used a Tatung EVA)
- silicone cooking spoon
- measuring cup
- cutting board
- 1.5 lbs Italian sausage links (I used 7 links of Premio sweet Italian sausage)
- 2x 14 oz bags frozen cheese tortellini (I used Seviroli)
- 2x 28 oz cans crushed tomatoes seasoned with basil, garlic and oregano (I used Red Pack)
- grated parmesan or shredded cheese (optional, for serving)
- 1/2 cup water (approximate)
Plug the pressure cooker in.
Cover the bottom of the pot with a thin coating of olive oil.
Set the pressure cooker to saute.
Put the sausage links into the pot and brown.
Once the outside of the sausage looks browned cut a link open. You want to see a little pink in there, but it should not be raw.
Remove the sausage from the pot and set aside.
Pour the water into the pot and scrape the bottom of the pot with the silicone spoon to remove any meat that stuck to the bottom. You don’t want a liquid consistency in there so only use enough water to help loosen any meat.
Slice the sausage links into coins, then return the sausage to the pot.
Place the frozen tortellini into the pot on top of the sausage.
Pour the cans of crushed tomatoes on top of the tortellini. Make sure all tortellinis are covered with sauce.
Put the lid onto the pressure cooker and close it to seal.
Set the pressure cooker to cook on manual high pressure for 2 minutes.
Once the cooking cycle has finished do a quick pressure release.
Serve immediately with shredded cheese or grated cheese on top if desired.
