Pressure Cooker Pepperoni Pizza Pasta

- electric Pressure Cooker (I used a 6 Qt Zavor LUX LCD)
- silicone cooking spoon
- measuring cups
Ingredients
- 1 lb mini wheels or similarly sized small pasta
- 2x 15 oz cans of pizza sauce OR 1x 28 oz can tomato sauce
- 4 cups water
- 2 tbsp Italian seasoning
- 1x package mini pepperoni
- 2 cups shredded mozzarella cheese
Instructions
Plug in the pressure cooker.
Place 2 cups of water into the pot of the pressure cooker.
Put the pasta into the pot.
Pour the sauce over the pasta.
Add in the seasoning and the remaining 2 cups of water.
Check to be sure that the pasta is completely covered with liquid.
Place the lid on the pot and set the vent to the “sealed” position.
Set the pressure cooker to cook for 5 minutes on the manual high pressure setting.
Once the cooking cycle has finished, do a quick pressure release.
Give the dish a quick stir using a silicone cooking spoon.
Add the 2 cups of shredded mozzarella cheese to the pot and stir well.
Add the mini pepperoni to the pot and stir until thoroughly combined.
Serve immediately and enjoy!

This sounds delicious! I think it would be easy to make this vegetarian too by swapping out the pepperoni for aubergine and courgette or other veggies.
