Ingredients
- 1 tsp olive oil
- 8 oz package cooked cajun sausage
- 3 boneless chicken thighs
- 1 red onion, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 3 ribs celery, chopped
- 1 tbsp minced garlic
- 1 1/2 cups Basmati rice
- 1/2 tbsp salt
- 2 tbsp cajun seasoning
- 1/2 tsp thyme
- 1x 14oz can diced fire roasted tomatoes
- 1 3/4 cup chicken broth
- 8 oz cooked shrimp, thawed and shells removed
Instructions
Cut the chicken thighs into bite sized pieces and set aside.
Replace the lid and allow the jambalaya to sit for 5 minutes, in order for the shrimp and sausage to heat.
