- 8 cups turkey stock
- 1 lb ground turkey
- 16 oz frozen mixed vegetables
- 28oz can diced tomatoes seasoned with basil, garlic & oregano
- 1.5 cups white rice
- 2 tsp Italian seasoning
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp black pepper
- 2 tsp oregano
- olive oil
Set the pressure cooker to saute.
Add 1-2 tbsp of olive oil to the pot, just enough to create a very thin coating on the bottom of the pot.
Add the ground turkey to the pot and brown the turkey.
Once the turkey has finished browning, add the rice and seasonings to the pot.
Pour the broth into the pot.
Ad the diced tomatoes and then the mixed vegetables to the pot.
Place the lid onto the pot and close to seal.
Set the pressure cooker to cook on manual high pressure for 8 minutes.
Once the cooking cycle has finished, do a quick pressure release.
