I can’t believe summer vacation is almost over. I’m trying to make the most of what little time is left before my youngest goes back to school, so the last thing I want to do is spend my free time in the kitchen, heating up the house. Easy 30-minute meals are perfect for these hot days of summer. These are also the type of meals that are perfect for making once school resumes and all of the business that comes with that returns. Today I’m going to share one of my tricks to getting a tasty meal on the table in a hurry.

In addition to the Applewood Smoked Bacon Pork Tenderloin, we’ve also tried a few of the other varieties of Smithfield Marinated Fresh Pork. I love cooking with them because they’re made with real ingredients and there’s no need to marinate or prep them. That’s right folks, it’s fresh pork that’s perfectly marinated and perfectly seasoned and ready to use right out of the package. The hardest thing you’ll have to do is decide which variety you want to use!

Now it’s time for me to share my recipe.
When I was figuring out what to make with the Smithfield Applewood Smoked Bacon Fresh Pork Loin Filet I bought, I used my tastebud logic. It works like this. I decided to make potatoes with the pork, because we do love potatoes. When I think of potatoes I also think of bacon, cheese and a dressing to go on top of them. Sounds like a winning combination, right? I made it one step better than that by making the dish a one-pot meal! Here’s how I made Pressure Cooker Applewood Smoked Bacon Pork Loin Filet And Loaded Potatoes.
Pressure Cooker Applewood Smoked Bacon Pork Loin Filet And Loaded Potatoes
- electric pressure cooker (I used a 6 qt)
- measuring cup
- trivet (I used a silicone trivet)
- 1 Smithfield Applewood Smoked Bacon Fresh Pork Loin Filet (the one I used was 1.74 pounds)
- 3-4 large Russet potatoes
- 1.5 cups chicken broth (divided into 1 cup and 1/2 cup)
- ranch dressing OR sour cream
- shredded cheddar cheese
- olive oil
Cover the bottom of the pot with a thin layer of olive oil.
Cut the Smithfield Applewood Smoked Bacon Pork Loin Filet in half so it fits nicely into the pot of your pressure cooker.
Set the pressure cooker to saute and sear the pork. Once you see the top is turning white, turn the filet over and saute the other side.
While the pork is being sauteed, cut the potatoes into halves or quarters. If you cut them smaller they’re likely to get too soft and fall apart while cooking.
Remove the pork from the pot and set aside.
Pour a half cup of broth into the pot, in order to deglaze the pot. Use a silicone cooking spoon to loosen any of the meat that stuck.
Pour the remaining 1 cup of chicken broth into the pot, then place the potatoes into the pot.
Put the trivet into the pot.
Place the two halves of the pork filet onto the trivet.
Place the lid onto the pressure cooker and close to seal.
Set the pressure cooker to cook for 13 minutes on manual high pressure.
Once the cooking cycle has finished do a quick pressure release.
Use a slotted spoon to lift the pork and potatoes out of the pressure cooker and move them to a platter.
Slice the pork and plate it immediately. Scoop up any loose bacon rom the pot and place it on the potatoes, along with some shredded cheese and sour cream or ranch dressing.
Serve with a vegetable or salad and enjoy!
