I love coffee. It’s a favorite beverage that I drink daily at home. It’s also something I like have with friends and conversation. Unfortunately, coffee shops can be pretty expensive. I’d much rather get together with some friends over coffee right in one of our kitchens, given the choice. While coffee and boxed cake are certainly easy enough, they don’t necessarily seem special. So what do you serve during an impromptu coffee date? No-Bake Cheesecake Parfait and cappuccino!
No-Bake Cheesecake Parfait is super easy to make. You can make it just minutes before you need it or in advance for an even prettier look. This super yummy dessert is inexpensive to make and alls for only 5 ingredients. And best of all, it’s versatile, so you can serve them in coffee mugs, mason jars, bowls, or whatever you like.
Speaking of coffee mugs, let’s chat about coffee.

Coffee is a wildly popular beverage, equally perfect for quiet me time, girlfriend get togethers and large family gatherings. It’s been easy to make a cup of coffee at home for some time now. Cappuccino maybe not so much. It just isn’t the simplest thing to make. That changed recently, with the arrival of Baileys Cappuccino, a quick and convenient single-serve cappuccino for the Keurig machine that just arrived on the market.
Currently there are four varieties of Baileys Cappuccino available: Caramel, Irish Cream, French Vanilla and Mint Mocha. You can purchase Baileys Cappuccino on Amazon. You can also find it in select stores including Acme, Albertsons, Balls Hen House, Buehlers, FreshTyme Market, Horrocks Markets, Jewel Osco, Menards, Price Chopper, Randalls, Shaws Grocery, Tom Thumb, Tops Supermarkets, Wegmans, and all Kroger stores in the Southwest region.
Baileys Cappuccino takes only a minute to make. To make one cup you use a single serve K-cup and one frothing packet, both of which are included in the box. Each box contains six servings, which is to say it contains 6 K-cups and 6 frothing packets. First you place the contents of the frothing packet into a coffee mug. Then you put the K-cup into your Keurig and brew it into the mug. Once the Keurig has finished brewing, you stir the beverage until the contents of the frothing packet has completely dissolved. FYI – Should you find that your beverage still has frothing packet particles floating around, I found it helpful to press them up against the side of the mug with my spoon to break them up, then stir once more. That’s it!
When contemplating the type of treat I’d serve with a beverage like this, I couldn’t help but think of cheesecake. I always think of cheesecake. But as we all know, cheesecake is not quick to make. Cheesecake parfait, however, is really simple to make. No-Bake Cheesecake Parfait requires no baking (hence the name) and is ready in no time. Here’s how I make No-Bake Cheesecake Parfait.
No-Bake Cheesecake Parfait
This recipe makes 6-8 parfaits.
- hand mixer
- medium glass mixing bowl
- measuring cups
- measuring spoons
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 2 tsp lemon
- 1 cup heavy cream
- 2x cans apple pie filling
Place the cream cheese and lemon into a mixing bowl.
Use a hand mixer on low speed to combine the cream cheese and lemon until the mixture is smooth.
Add the cream to the bowl and continue to mix for 1 minute.
Add in the sugar and beat for about 2 minutes, until the mixture has thickened and stiffened a bit.
Place 1-2 tablespoons of apple pie into the bottom of each glass. Exactly how much pie filling you use depends on the size of the glasses you’re using.
Spoon some of the cream cheese mixture on top of the applepie filling.
Create a second layer of apple pie filling and then a second layer of cream cheese mixture on top of that.
You can top this with a little whipped cream and serve right away if you like. Or, you can place the glasses into the fridge for 30 minutes or more and the whole dessert will firm up a bit and make for neater serving and presentation.
