Easy Gluten-free Bagel Bites
I came across a recipe for 2-ingredient bagels. I was intrigued, even finding that the recipe actually calls for five ingredients. I liked the bagel dough and decided to try and make it gluten-free for my youngest. We’ve always got frozen gluten-free bagels on hand. They’re pretty expensive, and they don’t taste anything at all like a real bagel. I modified the insructions slightly, baking at a lower temperature. The bagels are good, they taste as good as or better than any frozen gluten-free bagel I’ve ever had. They are easy to make and pretty inexpensive. Plus there’s no need for crazy ingredients, yeast, a stand mixer or boiling! I will say that these bagel bites don’t stay soft and chewy for an especially long time (although they can be resoftened with a microwave), so I frequently cut this recipe in half and that’s enough for my son for one day. - measuring cups
- measuring spoons
- silicone pastry brush
- 1 cup Bob’s Red Mill Gluten-free 1-to-1 Baking Flour
- 2 tsp gluten-free baking powder
- 1/2 tsp salt
- 1 cup plain Greek yogurt
- 1 egg
- Trader Joe’s Everything But The Bagel Seasoning (or other seasoning/topping of your choice)
Preheat the oven to 375 f.
Place a sheet of parchment paper onto a baking sheet to create a work space.
Place the gluten-free flour, gluten-free baking powder and salt into a mixing bowl and whisk thoroughly to combine.
Add the yogurt to the bowl and stir well until the mixture is combined. It will not be liquid or solid, it will be lots of crumbly looking pieces.
Pick up the dough and form a large ball.
Place a fresh sheet of parchment paper onto a baking sheet and spray some nonstick cooking spray on it.
Knead the dough for 2-3 minutes.
Separate the ball of dough into 4 smaller balls and then half those, making 8 total.
Place the uncooked bagel bites onto the parchment paper lined baking sheet.
Place the egg into a small bowl or cup and gently mix to break the yolk.
Use the pastry brush to brush each bagel bite with the egg.
Sprinkle the bagel seasoning on as liberally as you like.
Bake for 25 minutes.
Allow the bagel bites to cool for a couple of minutes before cutting them.
Serve with your favorite spread and enjoy!
