Instant Pot Beef Roast With Vegetables is a tasty, filling meal that takes under an hour to make but tastes like it’s been cooking in a slow cooker for hours.
Hubby loves it when I make a roast. Pork or beef, it doesn’t really matter. He’s just so happy to come home and find a big pot full of meat and vegetables. The Instant Pot gives me the opportunity to make exactly those types of meals with very little effort, a reasonably short amount of time and no pile up of pots and pans to wash. In under an hour you have a tasty, filling meal that tastes like it’s been cooking in a slow cooker for hours. Here’s how I made it.

- 2.5 lb bottom round beef roast
- 4 medium-large potatoes
- 1.5 cups frozen carrots
- 1x 10.5 oz cans French Onion Soup
- 3 tsp Italian seasoning
- olive oil
Cut the beef roast in half.
Cover the bottom of the Instant Pot with light coating of olive oil.
Brown the roast on all four sides, which takes about 8 minutes.
Remove the roast.
Add the broth to the Instant Pot and switch the Instant Pot to saute to deglaze the pan.
Add the potatoes, corn and seasoning to the Instant Pot.
Return the beef to the Instant Pot.
Set the Instant Pot to cook on manual high pressure for 35 minutes.
Once the cooking cycle has finished, let sit as if for a natural pressure release for 10 minutes, then do a quick pressure release.
Serve and enjoy.
