Ever have one of those days where you feel like you don’t have a chance to sit down? I had one earlier this week. Things were so hectic I even forgot to defrost something to make for dinner. I popped into ShopRite and quickly found the solution to my problem.
I wanted to serve something tasty but simple, something that wouldn’t require tons of work. Right there near the first few aisles of the store was my answer – fried chicken! It’s one of hubby and my older son’s favorites. Where did I find the chicken? ShopRite!
ShopRite has an area right near the deli counter and salad bar where they sell some prepared foods like fried chicken and salads. First I picked out my chicken. That’s super easy. My ShopRite keeps the chicken in three areas all within a short distance of each other. This makes it easy to get what you need and carry on with whatever you’re doing. I grabbed an 8-piece chicken. There were some Ready Pac Salads right next to the chicken and I thought one of those would make a nice little side.
Then right there at the end of the row was a display of 1.25 liter Coca-Cola™ products. There were several varieties there, I chose the Classic as it’s hubby’s preference. With my 3 items in hand I headed to the checkout. ShopRite has a Coca-Cola™ meal deal going on this week that let’s you save $.99 when you buy a ShopRite Kitchen 8-Piece Fried Chicken and either 1.25L Coca-Cola™, DASANI 1L OR FUZE® Iced Tea 1L with your Price Plus card.
Feeding the family isn’t a big to do in this case. This is a meal that you can pull together with very little time and effort that your whole family will enjoy. The chicken is already ready and the Coca-Cola™ only needs ice. The salad is also already ready, which means that all you need to do is make the tortilla bowls. Here’s how you do that.
Homemade Tortilla Bowls
This recipe serves 2. It is easily increased by doubling the amount of tortillas and salad.
- 2x 5 inch pie plates or similarly sized oven-safe bowls
- 2x 8″ burrito-size flour tortillas
- approximately 6 oz prepared salad and dressing
Preheat the oven to 425 f. While the oven is warming you can get a couple of glasses and napkins out. Now it’s time to make the tortilla bowls.
Spray each side of each tortilla with nonstick cooking spray, then place each tortilla into one of the pie plates and shape into a bowl form.
Place the pie plates onto a baking sheet and bake for 8-10 minutes, until the edges of the tortillas are browned.
Let the tortilla bowls cool before using them.
Serve with fried chicken and your favorite Coca-Cola™ product.
