English Muffin Breakfast Pizzas are a tasty breakfast that doesn’t take long to make. English muffins are great because they’re relatively inexpensive, tasty, and really versatile. Add some egg, a little deli ham and some shredded cheese and you have a really tasty breakfast pizza.

When I was younger I used to only think of butter or jelly when I thought about making an English muffin. I know now that the only limits to what you can put on there is your imagination. Add some egg, a little deli ham and some shredded cheese and you have a really tasty breakfast pizza. It’s a tasty breakfast that doesn’t take all that long. You can even change it up easily if you want to use a different ingredient. My oldest is a big fan of breakfast sandwiches and these were a huge hit with him. Here’s how I make them.
English Muffin Breakfast Pizzas
The recipe as shown below makes 4 pizzas.

- small mixing bowl
- baking sheet
- aluminum foil
- toaster (optional)

- 2 English muffins, split
- softened butter
- 2 eggs
- 2 slices deli ham
- 3/4 cup shredded cheddar cheese
- diced green onion
Preheat the oven to 350 f.
Line the cookie sheet with aluminum foil.
Place the eggs into a small mixing bowl with a splash of milk and whisk until blended thoroughly.
Scramble the eggs, making sure they are on the moist side.
Dice or mince the ham.
Cut the English muffins in half and place a light coating of butter on each one before placing it onto the cookie sheet. If you prefer your English muffins to be on the crispier or firmer side, lightly toast them in the toaster before placing the butter on them.
Distribute the eggs onto the 4 open faces of the English muffins.
Distribute the ham evenly amongst the 4 muffins.
Sprinkle the cheese onto the 4 muffins, you can be as generous here as you like.
Sprinkle the green onions on top.
Bake for 10 minutes, until the cheese is melty.
Serve and enjoy!
