Customize Crispy Rice Treats so they look as good as they taste! It’s not that hard to do at all with the help of Celebration by Frey™ and a cookie cutter. All you need is a little time and even less effort and voila – Crispy Candy Cupcake Treats!

If you’ve read From Val’s Kitchen for a while, and even if you haven’t, you’ve probably noticed that the recipes I share the least frequently are sweets and treats. Baking and creating treats is just not my strong suit. On the occasions I do share those recipes, I keep them pretty simple. Like crispy treats simple. Not only is my knowledge of making sweets somewhat limited, so it my ability to decorate them. So how exactly do you spruce up a simple dessert or treat to make it look cute or fun when you can’t decorate to save your life? You turn to Celebration by Frey™!

One of my son’s favorite treats are super easy to make. Crispy Rice Treats. You can buy them under a national cereal brand in the grocery store, or you can make them from scratch. My youngest is gluten-free, so I make them for him. I make them following the same intructions as the big brand but substitute with gluten-free puffed rice cereal. Everything else is the same. So, we have these beige, rectangular treats. I think they look rather boring. How do I, with my limited powers of creativity and color combinations, make the crispy rice treats look cute? It turns out it’s not that hard to do at all with the help of Celebration by Frey™ and a cookie cutter. All I needed was a little time and even less effort and voila – Crispy Candy Cupcake Treats! Here’s how I make them.
Crispy Candy Cupcake Treats
This Crispy Candy Cupcake Treats recipe is easily gluten-free, just use gluten-free cereal!
- large mixing bowl
- measuring cup
- wax paper
- 13 x 9 baking pan
- cupcake shaped cookie cutter
- cookie sheet
- 6 cups your preferred brand of puffed rice cereal (some are gluten-free and some aren’t)
- 10 oz bag mini marshmallows
- 3 tablespoons butter
- 6 oz chocolate chips
- 1/4 cup milk
- Celebration by Frey™ Sixlets Shimmer™ Princess mixture (I used 3x 1.75 packages, you can also use them from any of the size packages as well
- 8 red Celebration by Frey™ gumballs
Place the marshmallows and butter into a large mixing bowl.
Heat the contents for about 2.5 minutes on high.
While that is heating, place a piece of wax paper into the baking pan, making sure the paper is cut large enough that it covers both the bottom and sides of the pan. Cut a slightly smaller second piece of wax paper that’s just large enough to fit inside the baking pan.
Add the puffed rice cereal to the mixing bowl and stir well until the ingredients have been thoroughly combined.
Place the cereal mixture into the baking pan. Try to create as even of a layer as possible.
Place the second piece of wax paper on top of the cereal mixture and press down firmly. This will flatten the cereal and push it together.
Let sit for about 5 minutes, giving the mixture time to finish cooling off.
While the cereal mixture is cooling, rinse the mixing bowl well so you can reuse it.
Place the pan into the fridge for 5-10 minutes (no more). This ensures the cereal is firm enough to work with and decorate.
While the cereal mixture is cooling, place the chocolate chips and milk into the mixing bowl.
Remove the cereal mixture from the fridge. Use the cookie cutter to create the cupcake shapes. You should be able to get 6 – 8 of them depending on how closely you position the cookie cutter. Place the shapes onto a cookie sheet lined with wax paper.
Heat the chocolate in the microwave for about 2 minutes, until the chocolate chips are melted. Stir the chocolate until it’s smooth.
Use a large spoon to put some of the melted chocolate on the wider top portion of the cupcake. (Envision where you might put icing and that’s where you want to put the chocolate.)
Once you’ve covered the “tops” of the cupcakes with chocolate it’s time to decorate.
Place the Sixlets into the chocolate, making sure to cover as much of the chocolate as possible.
Place a red gumball at the top of the cupcake.
Once you’ve decorated all of the treats, place the baking tray into the fridge for about 20 minutes so everything can set.
Serve and enjoy!
