Apple Cake Mix Muffins are tasty and so easy to make! Cake mix, pie filling and a couple of pantry staples come together to make the moistest muffin ever!
Today I want to introduce you to my Apple Cake Mix Muffins. First, let’s talk about baking briefly. I am not afraid to say that I have weaknesses. Baking is one of them. You can’t just “concoct” like you can with just about every other food. So when I want something baked, I usually rely on existing products that are inexpensive and convenient and help me make what I want to make. For cakes, I usually use cake mix. And I almost always have a couple of cake mixes around the house. This week I wasn’t in the mood for cake though. I was in the mood for muffins. While there are some tasty muffin mixes out there, they can be a bit pricey. So, I decided to make some muffins using a cake mix and a couple of other ingredients. The Apple Cake Mix Muffins were a big hit, so I am sharing the recipe to make them with you. I have to say these muffins are the moistest muffins I have had in a long time, if not ever. I will definitely be making them again. Here’s how I make them.
Apple Cake Mix Muffins
This recipe makes 10-12 really large muffins.
- large mixing bowl
- large muffin pan
- muffin liners
- silicone brush
- 1x yellow cake mix (I used a 15.25 oz Betty Crocker Butter Recipe Yellow cake mix)
- 1x 21 oz can apple pie filling
- 3 large eggs
- 2 teaspoons apple pie spice
- 1 cup sour cream
- 4 tbsp butter, melted
Preheat oven to 350 f.
Place the apple pie filling on a large plate. Use a sharp knife to “dice” or “chunk” the pieces of the apple.
Place the cake mix, apple pie filling, apple pie spice and sour cream into the mixing bowl and combine thoroughly.
Place cupcake liners into the cavities in the muffin pan.
Divide the mixture equally into the muffin tins.
Bake for approximately 20 minutes or until the muffins are golden on top and the edges are browning and a toothpick inserted into the center comes out clean.
Let the muffins cool.
Brush the tops of the muffins with the melted butter.
Sprinkle the cinnamon and sugar on top of the muffin as liberally as you like.
