I can’t believe it’s September 1. The summer flew by and now it’s time for the kids to go back to school. For many parents, including myself, back to school means back to busy. Parents juggling work, errands, doctor’s visits, after school clubs and activities, and sports may feel like there aren’t enough hours in the day. And in the middle of a really hectic day, the last thing you really have the time and energy for is spending hours in the kitchen.
Whole Foods recently challenged me to come up with a tasty dish for those busy weeknights after school. I love to concoct recipes and am always up to a challenge like this. I chose to prepare my meal using ingredients from the Whole Foods 365 Organics line. The 365 Organics line is the Whole Foods store brand. This line of products contains the high quality and freshness you expect from Whole Foods while having a lower value-packed price as compared to big name brands.
By using a combination of high quality Whole Foods 365 Organics products along with fresh, organic tomatoes, I was able to put together a meal that the whole family enjoyed in very little time. Not only is this dish made entirely with organic ingredients, it is also gluten-free. Here’s how I made it. You can make this all on your stove pretty quickly, in about 20 minutes. You can also make it a one-pot meal that doesn’t heat up the kitchen, taking under 30 minutes using the Ninja 3-in-1 Cooking System.
Taco Chicken And Rice With Corn
- 1.25 lbs 365 Everyday Value Boneless Skinless Organic Chicken Breast
- 16 oz frozen bag 365 Value Organic Fire Roasted Corn, semi-thawed
- 2 cups organic tomatoes, chopped
- 8 oz 365 Everyday Value Organic Sour Cream
- 3 cups cooked organic rice
- 1 packet Simply Organic Mild Taco Seasoning
- 2-4 oz shredded 365 Value Organic Shredded Mild Cheddar & Monterey Jack Cheese
Place the chicken into a large skillet and cook.
Once the chicken is cooked, place the tomatoes, corn and taco seasoning into the skillet on medium heat. Stir well.
Add the rice to the skillet and stir well.
Add the sour cream and stir well.
Sprinkle some shredded cheese on top and serve immediately.
