Italian Wedding Soup is one of the soups that my hubby enjoys the most. I modified it a little in order to make it gluten-free. Where many people typically use tiny pasta I used rice. I love slowcooked soups, so decided to go that route. I used the Ninja 3-in-1 Cooking System to make this. You could make it in a typical slowcooker but it would take a bit longer.
Slowcooker Gluten-free Italian Wedding Soup
- 1 lb ground chicken breast
- 6 ounces fresh baby spinach
- 2 cups baby carrots
- 1 small onion
- 1/2 cup potato flakes
- 1 teaspoon Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 4 chicken boullion cubes
- 5 cups water
- 1/2 cup uncooked instant rice
Cut the carrots and onions and place into the Ninja.
In a large bowl, combine the chicken, potato flakes, Italian seasoning, onion powder and garlic powder and mix well.
Form small meatballs, using either a melon baller, soup spoon, ice cream scoop or your hands.
Place the meatballs into the Ninja.
Pour the chicken broth into the Ninja. (I make the broth in a mug using the Keurig, then stir and pour in.)
Cook on slowcooker high for 1 hour 45 minutes.
Add the spinach and the rice and cook on high for 15 minutes.
