Pickles. We love them. As I have mentioned before, pickles make a great snack. I mean, if you like pickles you know how awesome the taste of a cold and crunchy pickle can be. We’ve always got them on hand because my boys can’t get enough of them, as snacks and with meals like burgers or sandwiches. Did you know that they can be used as part of recipes as well? Yes they can! Here’s one of my favorites. It’s super easy to make. It brings a little different flavor to your ordinary pasta salad. Here’s how I make it.
Perfect Pickle Pasta Salad
- 1 lb elbow macaroni
- 1 cup mayo
- 1/2 cup onion dip
- 1x 24 oz jar Vlasic Zesty Dill Pickles
- 1 1/2 tsp onion powder
- 1 tsp garlic powder
- 1 small red onion
Cook the pasta according to the directions on the box.
While the pasta is cooking, dice all of the pickles except two. Keep the pickle juice.
Place the mayo, onion dip and 1/2 cup of pickle juice in a large bowl and mix well.
Add the pasta to the bowl and mix well.
Add the pickle pieces to the pasta and mix well.
Place 2 pickle slices on top for garnish.
Refrigerate for at least two hours before serving.
If you are serving this salad the next day, keep all of the pickle juice. Pasta salad can “dry” a little on the second day. You can make it fresher and creamier by “rehydrating” with a little more pickle juice.
