It used to be absolutely necessary to use every last part of an animal in cooking. This was mostly because of the necessity to get as much as you possibly could out of something, as there was no guarantee as to when the next meal would come along – as long as that meal was animal-based. The same could also be said for vegetables. For both, there has been an increasing in food trends moving toward utilizing every part of animals and vegetables in our consumption. The idea is not only to create more sustainable eating and production habits, but also to not leave behind or overlook some of the healthier portions of each food product. Food consumption is a huge topic nowadays. Specifically, how do we cut back on food waste? Essentially, as people become more involved and interested in utilizing every part of an animal, or vegetable as it may be, there will be a rise in things like bone broth. You will find that there’s much more delicious and healthy bits than what’s on the surface.
