You know I love to play with ricer, don’t you! It’s so versatile and just so yummy. Cheeseburger Rice Lasagna is just a giant casserole stacked like a lasagna. It changes up the look and texture a bit. This has a lot of cheese, between the sauce and the shredded cheese. It holds the flavor of whatever spices you add pretty well. Hubby enjoyed it quite a bit, and even my oldest liked it. If I figure out a way to replace the sauce with cheese the dish will be gluten-free, and at that point I know my youngest would totally love it. Here’s how I made it.
Cheeseburger Rice Lasagna
- 6 cups Minute Rice (cooked)
- 2 pounds ground beef
- 16 oz shredded cheddar cheese
- 16 oz jar Ragu Double Cheddar Sauce
- 1 1/4 tsp Italian seasoning
- salt and pepper to taste
Preheat oven to 350 f.
Spray the baking pan with nonstick cooking spray.
Brown the ground beef.
While the ground beef is cooking, make the rice according to the instructions on the box.
When the beef is cooked, drain the fat.
Combine the ground beef with 1/3 of the sauce and 1 tsp of the Italian seasoning and mix well.
Combine the rice with the remaining 2/3 of the sauce and mix well.
Place half of the rice mixture into the pan and flatten to create an even layer.
Place the ground beef mixture on top of the rice layer.
Place 12 oz of the shredded cheddar on top of the ground beef.
Place the remaining half of the rice mixture on top of the cheese.
Sprinkle the remaining 4 oz of shredded cheddar on top of the top layer of rice, along with 1/4 tsp of Italian seasoning.
Bake for 25 minutes.
Serve with salt and pepper to taste.
