Ever since I opened their package of garlic goodness I have been basically adding their different garlic products to just about everything that I have cooked. It seemed to me that tomato and mozzarella skewers just screamed for both garlic olive oil and Italian Herb nuggets. My bacon and cheese stuffed garlic bread? Well we skipped the butter completely and went with garlic olive oil! Chicken tenderloins with Garlic Gold Italian Herb Nuggets sounded good to me. Garlic corn on the cob? You don’t have to ask me to try that twice!
Of all of the different foods I’ve prepared with Garlic Gold over the past week, I do have one clear favorite – Garlic Herb Stuffed Tomatoes. The olive oil, seasonings and rice all blended perfectly together, and then it was sheer heaven when I added in a little cheese. I think I was channeling Gollum from The Hobbit when I put the plate of these on the table in front of us. “My precious!” Here’s how I made them.
- 1 cup cooked rice (I used Minute rice)
- 3 large tomatoes
- 1/4 cup shredded mozzarella cheese
- 3 tsp Garlic Gold Olive Oil
- Garlic Gold Italian Herb Nuggets
Preheat the oven to 400f.
While the oven is preheating, prepare the Minute Rice according to the instructions on the package.
Now is also a good time to hollow out the center of the tomatoes. Be sure the sides and bottom remain intact.
When the rice is finished and ready, put the Garlic Gold Olive Oil in the pot with the rice and stir well.
Add the cheese to the rice and stir well.
Fill the insides of each tomato with the rice mixture. The tomato should be full but not packed.
Sprinkle the Garlic Gold Italian Herb Nuggets generously over the top of the tomatoes.
Cook for 20 minutes and serve immediately.
