We do love potatoes in our house. Scalloped potatoes are a popular side. I decided that I wanted to use them in a casserole dish and not just a as a side. he whole meal had a great texture and consistency, and the flavors blended together wonderfully. This was easy to make and is a dish that will be added into regular rotation. Here’s how I made it.
Easy Scalloped Potato Casserole With Chicken
- 1.75 lbs uncooked chicken tenders
- 12 oz steamable mixed vegetables
- 22.6 oz can cream of chicken soup
- 2 cups milk
- 2x 4.4 oz boxes Au Gratin Potatoes
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- salt and pepper to taste
Preheat oven to 400 f.
Spray large baking pan with nonstick cooking spray.
Place the uncooked potatoes into the baking pan.
Mix the cream of chicken soup, milk, onion powder and garlic powder and pour over the potatoes.
Add the vegetables.
Add the chicken.
Bake for 20 minutes.
Serve with salt and pepper to taste.
