Leftover Turkey and Cranberry Sauce on a Bagel
After a traditional holiday meal, we’re always looking for ways to use up the leftovers. This tart and tasty breakfast sandwich is one delectable option.
- 1 tbsp spreadable cream cheese 15 mL
- 1 small thin bagel, split in half
- 1 slice jellied cranberry sauce
- 1 slice leftover turkey
- Nonstick cooking spray
- 1 large egg
Preheat breakfast sandwich maker.
Spread cream cheese on split sides of bagel. Place one bagel half, spread side up, in bottom ring of sandwich maker. Top with cranberry sauce and turkey.
Lower the cooking plate and top ring. Lightly spray the plate with cooking spray, then crack the egg into the ring. Pierce top of egg yolk with a toothpick or plastic fork.
Place the other bagel half, spread side down, on top of the egg.
Gently close the cover and cook for 4 to 5 minutes or until egg is cooked to your liking. Rotate cooking plate away from sandwich maker and lift rings. Use a plastic or nylon spatula to remove the sandwich.
The sweet tartness of cranberries works well with horseradish. If you like horseradish, try spreading a little on top of the cream cheese.
cook time: 4 to 5 minutes
You may have to trim your bagel halves slightly around the edges to fit properly into the sandwich maker. Kitchen scissors work best for this task.
Jellied cranberry sauce is a tradition in many U.S. households for the traditional Thanksgiving meal, but any cranberry relish will also work well. You could also just add dried or fresh cranberries to your sandwich.
We always have a lot of Thanksgiving leftovers. In some cases (like stuffing and mashed potatoes) I plan it that way, because we love them. Leftover turkey has been used for many things, including casseroles, sandwiches and soups. But I never thought to turn it into a breakfast sandwich!
