I don’t make rigatoni very often. For some reason I got it in my head yesterday that I wanted to make it. I had some ground beef, and some shredded taco cheese. It seemed like a good idea to make a taco recipe. Here’s what I came up with.
1 lb ground beef
4 oz taco blend shredded cheese
8 oz sour cream and onion dressing (I use Axelrod, you could also use dip or sour cream with an onion soup mix combined)
1 lb rigatoni
1 cup salsa
taco seasoning mix to taste (I bought a shaker full of it, and used about 2 tsp)
Preheat oven to 350 f.
Boil pasta according to instructions on the package.
While pasta is cooking, brown the ground beef.
Drain pasta and return to pot.
Add the onion dressing to the pasta and mix well.
Add 2 oz of the shredded cheese to the pot and mix well.
Add the ground beef to the pot and mix well.
Spray large casserole dish with nonstick cooking spray.
Add contents of pot to casserole dish.
Sprinkle the remainder of the shredded cheese across the dish.
Bake for 20 minutes or until cheese is melted.
