Did you have a good weekend? All in all, I did. I got to see my brother on Friday night. I got some things done on Saturday. And Sunday? Well, Sunday was a good day. Yes it was damp, chilly and rainy. And you may be wondering why a day like that, a day waving Monday to come on over, would be a good day. I’ll tell you.
Sunday was the Sectionals (state level) tournament for Special Olympics bowling. My son had qualified to go by finishing second in the regional tournament. He loves bowling, and I love watching him bowl. So getting up at 5:30 so we could make an hour plus drive didn’t cause me to bat an eye. He wasn’t thrilled, until I told him we were going bowling. We got there and it was packed. The house has over 80 lanes. There were 9 athletes on our lanes alone. Once he realized why we were there, a smile came to his face.
He was telling me “you rock”. And I do. He rocks too. A simple gesture like that just makes me smile each and every time he makes it.
And then we bowled. For his first game my son bowled 62 pins over average. He absolutely crushed it, bowling his best game EVER! He got strikes and spares. I really don’t know who was more excited, me or him. We were both jumping up and down and yelling! His second game wan’t as good, but he bowled his average. His third game he bowled 14 pins over average. In the end it was his best series yet. That makes a good day. Actually, that makes a really good day! Then they gave out the awards and we discovered that he’d won the bronze medal. That’s third in the state in his division!!!! How awesome! That made it a great day, an amazing day! I was so proud of him.
We made our way home, where he just wanted to hang out on the couch with me. It’s uneventful and maybe boring for some, but I live for those moments. Snuggling up on the couch holding hands while watching a tv show or movie is one of the simplest and most enjoyable things we do. We just enjoy each others company. It was the perfect closing to a long but great day for my son.
Somewhere along the line after my son fell asleep I realized was in the mood for a little snack. I had peach on the mind, probably because I’d been drinking Pure Leaf Not Too Sweet Peach Iced Tea all day. Why was I drinking it? Truthfully, I hadn’t ever drank it before this past week. I love iced tea, I will pick it over soda 9 times out of 10 at the very least. But I can be a little picky. I prefer a simple taste that is well balanced. Some teas are just tooooo sweet. The Pure Leaf Not Too Sweet Peach isn’t one of those. Once I tried the Not Too Sweet Peach I was hooked.
I wasn’t sure what I wanted to eat, but I knew it had to be simple. I wasn’t in the mood for a complicated recipe, or hours in the kitchen. And then it hit me. Peach Cheesecake Pastry! Now I know what you might be thinking. Somewhere out there someone is thinking “wait a minute, cheesecake isn’t simple”. Ah, but I wasn’t making a cheesecake, I was making some pastry. These bad boys are done in 30 minutes.
I wish the picture did the flavor justice. It’s super simple to make, requiring only five ingredients. And the flaky pastry crust is actually the perfect consistency for a little snack that goes well with some tea. I enjoyed the simple solitude of having my snack while relaxing and listening to some music. I’ll be sharing the recipe for the pastry soon, so be sure to check back.

And, when I looked at the label for Pure Leaf it wasn’t dizzyingly full of ingredients I couldn’t pronounce. That’s a good thing, nice and simple. It’s one of two Not Too Sweet varieties that I found.
