The other day after making potatoes on kabobs I also decided I wanted to see how they came out in packets. I wanted to season them with something that would cook itself into the potato while cooking way in the foil. The resulting potatoes were very tender and tasty. Everyone really enjoyed them and went for seconds but there wasn’t any so next time I make them I need to make more! Here’s how I made them.
Grilled Bacon Seasoned Potato Foil Packets
INGREDIENTS
- 2 lg potatoes
- 1/4 cup olive oil
- 1 tsp McCormick Molasses Bacon Grill Mates seasoning
- 1 tsp seasoning salt (I used Country Bob’s)
- 1/2 tsp pepper
INSTRUCTIONS
Preheat the grill.
Wash the potatoes and cut them into cubes.
In a large bowl combine the olive oil and the seasonings.
Place the potatoes in the bowl and coat them with the olive oil mix.
Place the potatoes in the center of a large piece of foil.
Fold up the sides and top of the foil.
Grill for 10-15 minutes.
Serve immediately with your favorite meat or poultry.

I may try these in a non-salt variation perhaps with real bacon bits and tiny pieces of onion.
