ABOUT 125 BEST CASSEROLES AND ONE-POT MEALS
Casseroles and one-pot meals are the ideal solution for busy home cooks who want wonderful food with a minimum of fuss and maximum taste. Convenience, easy preparation, economy and portability make this method of cooking perfect for today’s busy lifestyles.
These recipes and their results are very tantalizing and many are make-ahead. The wonderful variety includes big casseroles to delight a number of friends or to freeze in small amounts for future family meals, to long-simmering stews that will warm and comfort all on cold winter nights. The skillet meals range from small and quick dinners and stir-fries that are easy for novice cooks to elegant dishes that are entertaining worthy.
These outstanding recipes define comfort with the huge appeal of one-dish cooking.
Rose Murray has been a sought-after food writer, cooking teacher and broadcaster for over 30 years. She is a frequent contributor to food and lifestyle magazines. She has authored, co-authored or contributed to more than 40 cookbooks.
The beginning of the book includes a section of hints for successfully making casseroles and one-pot meals. Here you’ll find hints on equipment, temperatures, ingredients to use, cuts and types of products, storage and more. Chapters in this cookbook include:
- Chicken and Turkey
- Beef and Veal
- Fish and Seafood
- Brunch and Lighter Fare
I love casseroles and one-pot meals because not only do they taste good, but they don’t require tons of dishes and pots and pans to prepare. They are the perfect type of recipe for anyone with a busy lifestyle. Each chapter has an index of the recipes it contains. The recipes in this cookbook are all easy to understand. Serving tips and sizes are included. Missing are cooking and prep times. If a future edition is planned I’d love to see that included, as I find them so helpful to use when determining what recipe it is I’m actually going to make. There are some color photos in the cookbook but it should be noted that not every recipe has a photo, most do not.
With recipes like Baked Tortellini with Three Cheeses, Pasta E Fagioli Casserole, Turkey and Corn Enchiladas, Meatball Stroganoff, Skillet Shepherd’s Pie, Indian Corn Stew, Seafood and Broccoli Lasagna, Confetti Corn and Chili Pie, and Roasted Summer Vegetable Lasagna there’s something in here for everyone. This cookbook would be ideal for anyone interested in learning some new recipes for comfort food. It would also make a great gift.
