My family loves my meatloaf, but I was in the mood to change it up just a little. I often use cheese in my meatloaf mix, but this time I wanted to make a meatloaf roll. It only took a little extra time to make then my regular meatloaf, but boy was it worth it.
Bacon Cheeseburger Meatloaf Roll Recipe
- 3 lb ground beef
- 8 oz shredded cheddar cheese
- 1/2 cup bacon (I use packaged shredded bacon)
- 1/4 cup ketchup
- 1 tbsp onion powder
- 1 tbsp garlic powder
- salt and pepper to taste
Preheat oven to 350 F.
In large bowl mix ground beef, bacon, 2 oz shredded cheddar, ketchup, onion and garlic powder.
Place wax paper on a cookie sheet.
Place meatloaf in middle of cookie sheet. Flatten into a rectangle, as thin as you can make it.
Refrigerate for 15 minutes. If you can’t it’s ok, it just makes it a little easier to roll when it’s a little colder.
Remove meatloaf from fridge.
Lay 5 oz shredded cheddar down center of the meatloaf mix.
Using the paper, pull and turn the meatloaf mix into a roll.
(Unfortunately I don’t have a photo of this step as I was alone and it requires two hands.)
Sprinkle 1 oz shredded cheddar cheese on top of the meatloaf.
Cook for 1 hour at 350.
Remove from oven and let sit for about 5 minutes.
