Some nights it’s hard to come up with a reasonably priced meal that everyone can eat that doesn’t break the bank. That’s because my youngest has Celiac disease, which means he is supposed to eat gluten-free foods. Well, if you’ve tried some gluten-free foods and recipes, then you know they are not all created equal and some don’t taste very good. Actually, some taste just bad. Whenever possible I try to cook homemade dishes that are gluten-free. I make a large batch, so I have lots of leftovers that I can freeze for my son to eat on other nights where I might not be cooking gluten-free. One of my go-to products in many of my recipes is shredded cheese, which you may have noticed. Kraft Shredded Cheese is a staple in my house. It’s versatile and tasty.
Here’s a recipe I made this week that lasted two days. I prefer them to last longer for the sake of my youngest. But, this one didn’t because everyone liked it. It gets a lot of flavor from the cheese and the sausage. Check it out.
Gluten-free Cheesy Broccoli And Rice Casserole
- 1x 12 oz package Premio Chicken sausage
- 2x 8 oz Philadelphia cream cheese (softened)
- 4 cups Minute Rice
- 10 oz chopped broccoli
- 4 oz Kraft Shredded Cheddar Cheese
- 4 oz Kraft Shredded Colby Jack Cheese
- 1 tbsp onion powder
- 1 tbsp garlic powder
Preheat oven to 350 f.
Spray a large casserole dish with nonstick cooking spray.
Cook the sausage according to the instructions. I chose to cook mine in a pan on the stove in a little water, which took about 10 minutes.
Make the Minute rice according to the instructions.
Combine the cooked rice, softened cream cheese, onion powder and garlic powder in a large bowl. Or do like I do and just fold it together right in the casserole pan. I am all about using the least amount of dishes and pots and pans whenever possible.
Now add in the Kraft Shredded Cheddar and mix well.
Next add in the broccoli and mix well.
By now the sausage should be about finished. When it’s finished, cut it into bite sized slices and place on top of the rice mixture.
Now sprinkle the Kraft Shredded Colby Jack over top of everything.
Bake for 15-20 minutes, long enough for cheese to melt and things to start getting a little golden.
Remove from oven and serve.
