This is an easy way to make tasty crispy chicken. I’ve made chicken using potato flakes before, because that can be gluten-free if you use the right potato flakes. I really like this shaky cheese I found recently and just added that in.
- 1.5 lbs think chicken breast or chicken tenders
- 1/2 cup instant potato flakes
- 1 tbsp butter
- 1/2 cup Parmesan Garlic blend shaky cheese (I have only seen this by Mama Francesca, I’m sure you could make your own by combining things if you want)
Preheat the oven to 375.
Melt the butter.
Place the potato flakes and the shaky cheese into a bowl or a plastic bag where the chicken will fit.
Arrange an assembly line that will work for you. I go from left to right in the order chicken, butter, potato mix.
Dip each piece of chicken in the egg.
Dredge the chicken in the potato mix.
Bake the chicken for about 45 minutes, until turning golden.
Remove from oven and serve.
