I started this recipe with the intent of it becoming chicken parm. I added the cheese too early for that to work, but the dish itself is still very tasty.
Crockpot Cheesy Chicken And Rice
- 2 lbs chicken breast
- 2 cups Minute Rice (uncooked)
- 8 oz shredded mozzarella cheese
- 1 egg
- 1 cup Italian seasoned bread crumbs
- 26-28 oz tomato sauce or marinara sauce
- 1 tbsp onion powder
- 1 tbsp garlic powder
Spray the crock with nonstick cooking spray.
Place rice on the bottom of the crock.
Put the egg (break the yolk) in one bowl and the bread crumbs in another bowl.
Dip the chicken into the egg and then into the bread crumbs.
Place the breaded chicken on top of the rice.
Sprinkle the cheese over the chicken.
Sprinkle the garlic powder and onion powder, then pour the sauce over everything.
Cook on high for 4 hours. I like to stir it at least once about 2 hours in.
