I love cooking with the crockpot. I had some frozen hash browns and ground beef that I needed to use, this is what I came up with.
- 1.5 lbs Ground beef
- 16 oz frozen hash browns
- 1x 14.5 oz can diced tomatoes (I use the basil, garlic and oregano variety)
- 1/4-1/2 cup shredded bacon
- 1x 10 3/4 oz can cream of potato soup
- 4 oz shredded mozzarella cheese
Brown ground beef. A few minutes before the ground beef is finished add in the diced tomatoes and mix well.
Spray crock with nonstick cooking spray.
In a bowl combine hash browns and cream of potato soup.
Place that in bottom of crockpot.
Place the ground beef and diced tomatoes mixture on the top.
Cook on high for 4 hours.
Sprinkle shredded mozzarella on top and serve.
