Some nights while CJ is eating his gluten-free chicken I make chicken for the rest of us. RB and I really like panko bread crumbs, so this recipe has become a favorite. It’s tasty and easy to make.
- 1.5 lbs boneless chicken
- sliced mozzarella cheese
- 1 small jar red sauce (or 1 large is making pasta with the dish)
- @ 2 panko bread crumbs
- 2 eggs
Break the eggs in a bowl.
Pour 1-2 cups of panko bread crumbs into a baggie. I usually pour in 1 and then add more if it runs low before I’m finished.
Dip each piece of chicken into the egg and then dredge it in the panko bread crumbs. Place on plate.
Fry the chicken pieces from the plate in olive oil for about two minutes per side.
While frying the chicken, pour enough red sauce in the bottom of a baking dish to cover it.
Place the partially cooked pieces of chicken inside the baking dish.
Pour a little sauce over the chicken.
Place slices or strips of mozzarella cheese on each piece of chicken.
Drizzle a little red sauce over the top of the chicken.
Bake for about 15 minutes.
Serve hot with a vegetable and noodles or rice.
