One of my son’s favorite food groups is starch. He, like his mother, grandma and great grandma, loves pasta and carbs. Being diagnosed with Celiac Disease several years ago changed that for him. In the beginning I made rice every day or two. As I learned more about Celiac Disease and the gluten-free diet I discovered there were gluten-free pastas on the market. So we started trying those.

Notta Pasta is my husband’s favorite fluten-free pasta to date. Notta Pasta is a flat rice noodle that looks like something you might find in an Oriental dish. It comes in four varieties – spaghetti, linguine, fettuccine and vermicelli. The pasta is very easy to make – just boil water, add pasta and cook for a few minutes. The pasta cooks quickly, if you leave it on too long it will be mushy. It will look very shiny and will seem very heavy when you strain it.
We have found that this pasta does very well with red sauce, it really grabs the flavor and color of the sauce. It also did well with a butter sauce and an olive oil based sauce as well. We did try it with a type of brown gravy and didn’t care for the taste, that gravy was much better suited to a corn pasta.
