- air fryer
- medium size saucepan
- medium size metal bowl
- whisk
- measuring cups
- measuring spoons
- large circle cookie cutter
- cutting board
- baking sheet
- small glass bowl
Ingredients
- 1 package refrigerated pie dough
- 1 egg, beaten
- 1 cup Lemon curd
Lemon Curd Ingredients
- 8 egg yolks
- 1 3/4 cups granulated sugar
- 3/4 cup oz freshly squeezed lemon juice (4 large lemons)
- pinch of salt
- 2 tbsp grated lemon zest
- 1/2 cup chilled unsalted butter, sliced
Icing Ingredients
- 1 cup powdered sugar
- 1/2 lemon
Instructions
Add an inch or so of water to a medium size saucepan.
Using medium-high heat, bring the water to a simmer.
While the water is heating up, Place the yolks and sugar into a medium sized bowl and whisk vigorously until smooth.
Add in the lemon juice and salt, and whisk until smooth.
Once the water reaches a simmer, reduce the heat to low and place the bowl over the saucepan.
Cook whisking constantly.
Whisk for 20 to 22 minutes. The mixture look a light yellow color. Do not allow the mixture to boil or it will curdle.
Remove the mixture from the heat and whisk in the lemon zest.
Add butter gradually, one piece at a time, whisking well to combine.
Allow curd to cool.
Transfer to airtight container and refrigerate.
Now it’s time to make the hand pies.
Preheat the air fryer.
Make the filling.
Spread flour on the top of large cutting board to coat.
Lay the pie crusts and gently roll them out to ¼” thickness.
Use the circle cookie cutter cut out 6 circles.
Place the circles of dough on a baking sheet.
Place 1 tbsp of filling in the center of the pie dough.
Brush the edges of the pie dough with beaten egg.
Fold the dough over, and press the dough down with your fingertips to seal closed.
Use a fork to press around the outside of the dough, leaving indentations on the edges.
Brush the top of the pies with beaten egg.
Sprinkle the top with sugar lightly.
Place the uncooked hand pies into the air fryer two at a time.
Cook on 380′ for 8-10 minutes or until golden brown and flaky.
While you’re cooking the pies, you can make the icing.
Add the icing ingredients in a small bowl.
Mix with a whisk until well combined.
Let cool slightly and top with icing drizzle.
Serve and enjoy!
