Tomato Mozzarella English Muffin Melts Recipe From Val's Kitchen

Did you see the English Muffin Breakfast Pizzas recipe that I shared the other day? They weren’t the only thing I made with English muffins this week. In fcat, I have been on a bit of an English muffin recipe binge. One of the simplest things I’ve done with them so far is one of my favorites. I made this recipe three nights in a row because it simply made my tummy happy. I love mozzarella cheese. It is one of my favorite cheeses, if not my very favorite. It pairs exceptionally well with tomatoes. It also pairs well with garlic bread. I had a taste for garlic bread the other day but didn’t have the right bread. So I decided to toast an English muffin and put some garlic butter on it. I liked it. I decided to put some tomato on there too, and then melt it. The result is a warm and tasty snack that is super simple yet super satisfying. Here’s how I make them.

  1. These look absolutely delicious! I make something similar with tomato sauce, but would love to try it with fresh tomatoes. Thank you so much for posting this!

  2. Great after school snack for the toaster oven that my daughter is allowed to use! I use English muffins, bagel thins, whole wheat hamburger buns or a 8″ flour tortilla! I use plain strained yogurt to replace the mayonnaise with some garlic, salt, pepper and chives in it, and I have used ricotta cheese as a replacement. Holds everyone over until supper time! There are so many versions that you can use!

  3. This sounds almost like a breakfast pizza. I kind of love that. I bet my hubs would love this too!
