You’ve probably noticed by now that I like products that save me time and energy. There are times when I like to cook from scratch, but then again there are times where there simply aren’t enough hours in the day and I look for ways to save time where I can. Take cake mix, for example. It’s great for a lot of other things besides cake. Here’s a simple recipe calling for only 4 ingredients that turns cake mix into soft and chewy crinkle cookies. These cookies would be great for a Valentine’s Day gathering. Here’s how I make them.
Strawberry Cake Mix Crinkle Cookies
The recipe makes 18-24 cookies, depending on how large you make the cookies. My batch made 18 nice sized cookies.

- 2 cookie sheets lined with parchment paper. Alternatively, you could use a silicone baking mat.
- ice cream scoop or cookie scoop
- wire cooling rack
- mixing bowl
- pot holders
- 1 box of strawberry cake mix
- 2 eggs
- 1/3 cup oil (I used vegetable)
- 1/4 cup of powdered sugar
Preheat the oven to 350 f.
Place cake mix, eggs and oil in a mixing bowl and combine thoroughly.
Place the powered sugar into a smaller bowl.
Place each ball into the powdered sugar and rotate to coat completely.
Place the balls onto the cookie sheet.
Bake for 10 minutes.
Let sit on the cooling rack for a few minutes before serving.
