Strawberry Cake Mix Crinkle Cookies Recipe From Val's Kitchen

You’ve probably noticed by now that I like products that save me time and energy. There are times when I like to cook from scratch, but then again there are times where there simply aren’t enough hours in the day and I look for ways to save time where I can. Take cake mix, for example. It’s great for a lot of other things besides cake. Here’s a simple recipe calling for only 4 ingredients that turns cake mix into soft and chewy crinkle cookies. These cookies would be great for a Valentine’s Day gathering. Here’s how I make them.

Strawberry Cake Mix Crinkle Cookies

The recipe makes 18-24 cookies, depending on how large you make the cookies. My batch made 18 nice sized cookies.

Equipment Needed

Ingredients

  • 1 box of strawberry cake mix
  • 2 eggs
  • 1/3 cup oil (I used vegetable)
  • 1/4 cup of powdered sugar

Instructions

Preheat the oven to 350 f.

Place cake mix, eggs and oil in a mixing bowl and combine thoroughly.

Line the cookie sheets with parchment paper.

Place the powered sugar into a smaller bowl.

Form balls with the dough. (I sometimes use a cookie dough scoop or an ice cream scoop, or if I can’t get that quickly I have also used a plastic medicine cup.)

Place each ball into the powdered sugar and rotate to coat completely.

Place the balls onto the cookie sheet.

Bake for 10 minutes.

Let sit on the cooling rack for a few minutes before serving.

  1. Strawberry cake is one of my favorite types of cake. I keep a couple of boxes in the pantry at all times. I suck at cookies, but I might be able to pull this one off. Bonus, I already have everything I need. I’m trying this over the weekend.

  2. Oh my gosh this would be perfect for Valentine’s Day. We’re always trying to think of fun creative things that I can make for my sons class. I think they would love this.
