Muffins. They’re tasty things aren’t they? Sometimes I am in the mood for them but don’t want to make from scratch. Other times I might not have the right ingredients. It’s those times where I find myself really appreciating that I keep a box of cake mix or two on hand. I almost always have applesauce, and frequently an apple or more. Combine the three ingredients and you have quick and easy muffins! Here’s how I make them.

Strawberry Applesauce Muffins

Equipment needed

Ingredients

  • 1 box strawberry cake mix
  • 2 cups strawberry applesauce
  • 1 apple, peeled and diced

Instructions

Preheat the oven to 350 f.

Place baking cups into the muffin pan.

Place the cake mix and the applesauce into the mixing bowl and combine thoroughly.

Peel the apple, then cut it into small pieces.

Add the apple to the mixing bowl and mix well.

Using the batter spoon, fill each of the cupcake liners with the cake mix.

Bake for 18-20 minutes, until the cupcakes are spongy and a toothpick comes out clean.

Let the cupcakes cool on the cooling rack for a few minutes before serving.
