Spring Cake Mix Cookie Bars Recipe From Val's Kitchen

I think most people know how to make chocolate chip cookie bars using cake mix. With spring and Easter around the corner, I thought it would be fun to change these cookies up and add some color. I wanted them to retain their chocolatey goodness but didn’t want them to be all brown so I decided to use M&M’s. I found the spring pastel colors on sale at the grocery store, and picked up a bag of milk chocolate as well as a bag of dark chocolate. I recommend you use a larger 9×13 pan instead of a smaller size, if you use the smaller size the cooking time will be off and they might not be cooked all of the way through. These bars are tasty and easy to customize. Part of their beauty is that they’re so easy to make, even if they don’t photograph as well as I’d have liked. Here’s how I made them.

Ingredients

  • 1 box white cake mix
  • 2 eggs
  • 1 stick butter, melted
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate M&M’s (spring colors)
  • 1/2 cup dark chocolate M&M’s (spring colors)

Instructions

Preheat the oven to 350 f.

Spray the baking dish with nonstick cooking spray.

Place the cake mix, eggs and butter into a large bowl and combine thoroughly.

Add in the M&M’s and gently stir.

Add in the chocolate chips and gently stir.

Spoon the mixture (it’s too thick to pour) into the baking dish.

Bake for 25-30 minutes, until the top has started to rise and it and the edges are turning a golden brown.

Serve as is, with your favorite hot or cold beverage, or even with ice cream.

  1. Those would go over big with my kids. I love baking with cake mix – I think it makes cookies and cookie bars come out so good.

  2. This is a recipe for any occasion. It is simple to do and I definitely know my kids would love it. Especially my hubby.

  3. This recipe is very easy to put together and takes practically no time to make. Try other flavors of cake mixes if you like. When I make them, I use 2 cups (total) of peanut butter chips and chocolate chips mixed together. Very easy to whip up at halftime!
