Ingredients

  • 24 unwrapped peppermint kisses
  • 1 cup godiva milk chocolate chips, melted
  • 2/3 cup Hershey cocoa
  • 1 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cups unsalted sweet cream butter softened
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda

Instructions

Preheat the oven to 350 degrees.

In a standing mixer, cream butter & both sugars until light and fluffy

Add the eggs one at a time and mix until incorporated.

Add in the peppermint extract and mix.

Place the flour, cocoa, salt, baking powder and baking soda into a large mixing bowl and combine with a whisk.

Gradually add 1/2 cup of the dry mixture to the butter mixture and mix until combined.

Using a small ice cream scoop, scoop some dough into your hands and roll it into a ball.

Bake for 8-10 minutes.

Press one peppermint kiss into the top of each cookie.

Drizzle the melted chocolate over the cookies.

Let the cookies cool for about 10 minutes before enjoying.

  2. I have never made any cookies with peppermint extract and what a brilliant idea. Peppermint is actually so healthy for you and this is a great alternative to a regular cookie with a chocolate kiss on top.

  3. Making thumb print or some call them kings crowns cookies is always on our list of Christmas cookies. Doing peppermint ones is something the kids will love to eat.
