Pot pie. Bread. What do these two things often have in common? Gluten. My youngest son has Celiac Disease and is supposed to follow a gluten-free diet. He has my love (along with my mother’s love and grandmother’s love) for all things carbohydrate, particularly breads. There are a few gluten-free breads out there in the supermarkets but frankly, most of them don’t taste as good as breads with gluten. And, none that I have found are versatile enough to use in different ways besides spreading something on them or using to make a sandwich. Until Brazi Bites, that is.

What are Brazi Bites?

Braizi Bites are bite sized pieces of Brazilian cheese bread. One of the numerous things that make these bite sized pieces of heaven great is that they are naturally gluten-free, because they’re made with tapioca flour instead of wheat flour. Along with being naturally gluten-free, they are non-GMO, soy-free, sugar-free, and trans-fat free.

While these delectable bites are made right here in the USA in Oregon, the delicious flavor comes from a recipe that originated in Brazil. Brazi Bites creator Junea Rocha moved here to the United States and couldn’t find anything like her favorite Brazilian cheese bread from back home. So, she developed the recipe and introduced it to the US. Brazi Bites started out in a limited amount of stores. The product exploded in popularity after Junea made an appearance on ABC’s Shark Tank, introducing Brazi bites to approximately 9 million viewers. They are now available in thousands of stores across the country, including stores like Wal-Mart, Costco, Whole Foods, Sprouts, Kroger, Publix and others. You can find your store at

Brazi Bites are available in four flavors:

  • 3 cheese Pizza
  • Cheddar & Parmesan (the best selling variety)
  • Garlic Asiago
  • Zesty Pepper Jack

The toasty, slightly crunchy outside of these puffy baked treats hides a delicious cheesy flavor in every bite. Brazi Bites are a perfect snack for any time. You can eat them alone as a warm snack. You can eat them with a dip as an appetizer. You can even eat them with soup, instead of another form of bread. Since they’re frozen and ready-to-bake, they are super easy to make. Just put them into the oven and bake for 20 minutes and they’re ready. It doesn’t get much simpler than that!

Besides being an excellent treat right out of the bag, Brazi Bites also make a tasty addition to many recipes. Pot pie isn’t something my youngest has often. With that in mind I decided to use Brazi Bites to make some mini chicken pot pie snacks. These mini pot pie snacks work equally well as an after school treat after school, an appetizer for a get together, and a warm movie snack. We all enjoyed them, particularly my youngest. Here’s how I made them.

Gluten-free Mini Chicken Pot Pie Snacks

The recipe as shown here makes 7 mini pot pie snacks. One bag says it has 18 Brazi Bites in it. Mine had a couple of extra. Not that I’m complaining. Those bad boys were put to good use and died a valiant death. I mean, they were enjoyed by all in a timely and mannerly fashion.

Equipment needed

  • mixing bowl
  • baking sheet


  • 1 bag Cheddar & Parmesan Brazi Bites, thawed
  • 6 oz cooked boneless chicken (I used Perdue Short Cuts Original Roasted)
  • 8 oz cream cheese, softened
  • 1 small can mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder

Preheat the oven to 400 f.

Use 3 Brazi Bites to form a small “bowl”. To do this, I made a ball out of the Brazi Bites, then pressed a spoon into it to create a bowl. Be sure to leave a bit of an edge to create a wall around the edge of the bowl.

Soften the cream cheese in the microwave. I warmed for 1 minute at half power. You don’t want to melt the cream cheese, you only want to soften it.

Add the seasonings to the cream cheese and stir.

Add the chicken to the mixture and stir well.

Distribute the chicken mixture evenly amongst the bowls.

Sprinkle a few of the vegetable pieces on top of each bowl.

Bake for 20 minutes.

Serve immediately.

  1. I have never heard of this company but they definitely have things that look absolutely delicious! I would love to make those small chicken pot pie’s. They look a whole lot better than the ones in I made in the past.

  2. I’ve only ever seen the Cheddar and Parmesan. I love them!!! They were great for leftover turkey sandwiches last Thanksgiving!

  3. I have not seen these in the store in my Canadian neck of the woods yet but I’ll have to look for them! They look and sound so delicious – and super easy to make! I can’t believe they’re gluten free too!

  4. I love the recipe. Mini chicken pot pies are a great snack. The 4 varieties of Brazi Bites all look so good, but if I were to choose, I’d get the Cheddar and Parmesan and Garlic Asiago.

  5. I normally make all my own dough and have a gluten free dough that works well. If a person is in a pinch and needs to quickly or just doesn’t have time to make the dough this would come in handy. So many toppings to choose from and add.

  6. I haven’t seen the Brazil Bites in the stores yet, but I’ve been hearing a lot about them lately. I’ll definitely have to keep my eyes peeled!

  7. I have made Brazilian cheese bread at home and it’s so delicious! I’d love to try the Cheddar & Parmesan Brazi Bites!
