Instant Pot Gluten-free Chicken Meatballs And Rice Recipe From Val's Kitchen

Meatballs are always a hit here. Once in a while I make chiken meatballs. I can usually adapt regulr meatballs to be gluten-free by replacing the regular bread crumbs with gluten-free bread cumbs. Or if you don’t have those, you can replace with instant potato flakes as I did in this recipe. The taste isn’t all that different, but the meatball will have a slightly different texture. My son loves bread, but gluten-free bread is expensive and doesn’t taste as good as some other things, which is why I made this particular batch of meatballs with rice. Here’s how I make them.

Ingredients

Makes large 12 meatballs

Meatball ingredients

  • 1 lb ground chicken
  • 1/3 cup instant potato flakes (be sure they’re gluten-free)
  • 1 egg
  • 1/3 cup milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Sauce ingredients

  • 28 oz can diced tomatoes
  • 2 cups chicken stock
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Other

  • 2 cups Minute Rice
  • 1/2 cup shredded parmesan cheese

Instructions

Place the sauce ingredients into the Instant Pot and stir.

Place the ingredients for the meatballs into a large mixing bowl and combine thoroughly.

Form meatballs.

Place the uncooked meatballs into the sauce.

Set the Instant Pot to cook on manual high pressure for 8 minutes.

Do a quick pressure release.

Add the rice to the Instant Pot.

Recover the Instant Pot and let sit for 5 minutes.

Add the shredded parmesan cheese to the rice and stir well.

Add the meatballs back into the Instant Pot and stir.

Serve immediately.

  1. Can’t go wrong with meatballs. I always keep some homemade meatballs in the freezer for quick meals. Rice feeds and goes a long way when feeding a family.
