Gluten-free Instant Pot Porcupine Meatballs are tasty, filling meatballs with a thick and chunky consistency, making them great for chilly fall nights.
Many times when we have meatballs it’s with one pasta or another, or by themselves for sandwiches. Sometimes I like to make the meatballs with rice, which are often called porcupine meatballs. When I do this, I like it best when they’re in a red sauce. I love rice, and when the rice cooks in the meatballs it takes on the flavor of the meat and sauce while remaining very tender inside the meatballs. I have made these in the oven and had the rice actually poke out like a porcupine. When I make them in the Instant Pot the rice doesn’t poke out in that same way, but the flavor is still great. These Instant Pot Porcupine Meatballs can take on an almost stew like thick and chunky consistency, if the meatballs break apart a little. Don’t panic if this happens because the flavor is even better. Here’s how I make Gluten-free Instant Pot Porcupine Meatballs.
Gluten-free Instant Pot Porcupine Meatballs
Equipment Needed
- electric pressure cooker (I used a 6 qt Instant Pot)
- large mixing bowl
- measuring cup
- measuring spoons
Ingredients
- 1.5 lb ground beef
- 1 cup uncooked white rice
- 1/2 cup dried chopped onion
- 1 tsp parsley flakes
- 1 tsp garlic powder
- 28 oz tomato sauce
- 1 cup water
Instructions
Spray the Instant Pot with nonstick cooking spray.
Place all of the ingredients except the tomato sauce and water into a large mixing bowl and combine thoroughly.
Form meatballs.
Pour the tomato sauce and water over the meatballs.
Set the Instant Pot to cook on manual high pressure for 15 minutes.
Allow pressure to release naturally.
Serve and enjoy!

My family loves porcupine meatballs! Knowing there is a gluten free option is great as we have a few friends that are gluten free. This gives me another option for them.
