I love lasagna. But sometimes I don’t want to go to all of the trouble involved with making it. And sometimes I don’t want to eat it in the traditional manner with a fork. You see, lasagna is one of the best comfort foods out there in my opinion. It’s great with its layers of cheesy, meaty goodness, but it’s equally good if not better as a soup. As the weather warms and summer approaches and then arrives, I typically make less comfort food because it’s hot enough without heating up the kitchen. The Instant Pot pressure cooker makes a mean soup. I decided to have a go at making lasagna in a soup form, made in the Instant Pot. The soup was a big hit, devoured on the first night. Instant Pot Lasagna Soup
Equipment Needed
- Instant Pot
- measuring cup
- measuring spoons
- silicone cooking spoon
- silicone ladle

Ingredients
- 1.25 lb ground beef
- 1 lb lasagna noodles
- 28 oz can diced tomatoes (I used the variety seasoned with basil, garlic and oregano)
- 24 oz jar pasta sauce (I used Ragu Chunky Tomato, Garlic, Onion)
- 8 cups beef broth
- 8 oz shredded mozzarella cheese
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
Place the Instant Pot on saute and brown the ground beef.
Break the lasagna noodles into small pieces, then put them into the Instant Pot.
Place the noodles in the Instant Pot on top of the ground beef, followed by the beef broth, diced tomatoes and pasta sauce.
Set the Instant Pot to cook on manual high for 11 minutes.
Let the Instant Pot naturally release pressure.
Add the shredded mozzarella cheese to the Instant Pot and stir well.
Add a dollup of ricotta when putting into bowls.
Serve and enjoy!

That's so fast for cooking lasagna soup! This is one of my favorite soups and if I had an instant pot, I would definitely try it following these instructions!

I cannot believe in 11 minutes. This is why I love my instant pot. I love that this soup still looks nice and hearty, I always think soups in there would need to be watery. Thanks for sharing.
