Gluten-free Rice Pudding #Recipe

World cuisine. When we think of the phrase, we think of popular dishes from other regions of the world. These dishes are undoubtedly popular because they prompt either thoughts or memories of the region they come from. The recipes feature authentic flavors, spices and even colors, enabling you to connect with the culture of that region even if only for a short time. When we think of world cuisine, most of us don’t think of frozen food. Until recently that is, due to the release of a line of frozen bowls and entrees from Saffron Road.

Saffron Road World Cuisine Bowls come in four varieties – Tortilla Chicken Bake, Vegetable Tortilla Bake, Thai Mango Chicken, and Sweet Chili Chicken. All chicken is humanely raised and antibiotic free. The gluten-free certified and Halal certified meals are free from artificial colors, flavors and preservatives. The bowls can be purchased now at Sprouts, Publix, and Meijer, and will be arriving in Whole Foods in the near future.

One of the World Cuisine Bowls that I tried was the Grilled Vegetable Tortilla Bake. This Mexican-inspired entree features a medley of vegetables topped with hand-crafted Oaxaca cheese and a chipotle morita sauce, served over hearty red beans and rice seasoned with Cotija cheese, and a tortilla. The entree was very flavorful, with the taste being more robust than I expected for a frozen entree.

Saffron Road Frozen Fish Bowls are are available in four varieties – Sesame Ginger Salmon, Masala Curry Fish, Lemongrass Basil Fish, and Thai Red Curry Fish. All fish is caught in the wild in Alaska. The gluten-free certified and Halal certified meals are free from artificial colors, flavors and preservatives. The bowls can be purchased now at Whole Foods, Giant, Publix and Sprouts, and will be arriving in Kroger and Meijer in the near future as well.

Saffron Road Frozen Entrees also uses authentic recipes and premium ingredients. There are many varieties, with three of the most recent additions being Chicken Tikka Masala, Chicken Pad Thai and Enchiladas Al Chipotle Entrees.

One of the frozen entrees that I tried was the Chicken Pad Thai with Rice Noodles. This meal features roasted white meat chicken simmered with carrots and scallions in an exotic peanut sauce served over
wide flat rice noodles. I found the dish to have a distinct flavor and even a low-key aroma that immediately brought Thai food to mind.

Both bowls and the frozen entrees are found in the freezer section, making them convenient and particularly suitable to folks that have a busy lifestyle. It only takes minutes in the microwave to take a meal from freezer to table. Being as the meals are all gluten-free and my youngest son is gluten-free, my Gluten-free Rice Pudding is a perfect complement for all of the meals. This dessert doesn’t take all that long to make, and can be enjoyed either warm or chilled. The other great thing about the dessert is that you can adapt it a little to suit the particular bowl or entree you are eating. For example, you could add a touch of cardamom to recipes featuring an Indian flavor, while nutmeg, anise and cinnamon would well suited for Thai dishes. Here’s how I make it.

Gluten-free Rice Pudding

Equipment needed

  • pot
  • mixing bowls
  • measuring cup
  • measuring spoon
  • knife
  • cutting board
  • whisk


  • 3 cups milk
  • 1 cup Minute Rice, uncooked
  • 1/2 cup raisins
  • 1/4 cup apple, diced
  • 1/2 cup honey
  • 2 eggs
  • 1 tsp vanilla extract

Place the milk, uncooked Minute Rice, honey, raisins and apple into the pot.

Bring to a boil, stirring occasionally. Reduce the heat to medium and cook for 5 minutes, whisking often.

While that is cooking, place the eggs and vanilla into a small bowl and whisk together.

Add 1 cup of the rice mixture to the bowl and whisk together.

Add the contents of the bowl back into the rice and whisk together.

Serve immediately warm or refrigerate and serve as is or with whipped cream.

  2. I really loved purchasing microwavable meals when I was working as a nurse. They were so convenient, inexpensive, and tasty too! Some of the doctors used to steal them though! Jerks!   3. I have never seen that brand and I don’t have any of those stores around 🙁 I wonder if Giant Eagle is similar to Giant. I’ll have to check. I do love rice pudding and went through a phase where I ate it everyday lol.

  6. I have seen this Saffron Road boxes in the store but I have not tried them yet. I think I’d start with the Sesame Ginger Salmon bowl and the Chicken Pad Thai. Can’t wait to try these. Oh, your gluten free recipe for rice pudding looks awesome too.

  8. Should never have gone to the Saffron Road site this hungry. All the fish bowls look great, leaning toward Lemongrass Basil Fish.

  9. I love Saffron Road…big fan of their roasted chickpeas, lentil crackers, and simmer sauces. I really want to try their other product lines, they all sound so delicious! I’d love to try the masala curry fish bowl!
