Jams and jellies were an item commonly found in our house when I was growing up. As a child I marveled at the versatility of a product that could be used on a cold sandwich like peanut butter and jelly, on a bagel with cream cheese, and on something warm like a waffle. Oddly enough, even though I knew it was a versatile product, I never thought about using it as an ingredient. Not back in those days anyway.

These days I love to find different ways to use products. I’m still no stranger to jams and jellies. While attending the Winter Fancy Food Show in San Francisco a few weeks ago, I was introduced to the folks at Felix Jams. I also got my first opportunity ever to try lingonberries. I’d heard of them a couple of times but had never tried them.

Lingonberries are tiny berries that grow in the wild in Sweden. The berries are hand picked and turned into one of the freshest tasting jams you will encounter. The delicious jams are gluten-free, have no preservatives, and are made with the berries, sugar and water.

Felix Lingonberry Jams come in 4 varieties:

  • Lingonberries
  • Lingonberries with Blueberries
  • Lingonberries with Spiced Apple & Cinnamon
  • Lingonberries with Ginger

I decided that the sassy flavor and great texture of Felix Lingonberry Jam would be perfect in one of my favorite foods – cheesecake. Because the jam is gluten-free, I wanted to make a gluten-free recipe that didn’t taste gluten-free. And because Felix Lingonberry Jam is ready to use, I also wanted to go with a no-bake recipe, so that anyone making it could just enjoy the deliciousness sooner. Plus, a no-bake recipe means noone needs to worry about baking for hours and getting cracks in the cheesecake, as some people do. The resulting Gluten-free No Bake Lingonberry Cheesecake was so good that we devoured it on the first day. There wasn’t a single crumb left to be had. (Lesson learned here? I know to make two of them in the future.) This recipe is so tasty that anyone will want to eat it, whether they’re gluten-free or not! And, it’s so simple to make that anyone can do it!

Here’s how I make it.

Gluten-free No Bake Lingonberry Cheesecake

Equipment needed

  • 8×8 baking pan
  • mixing bowl
  • whisk
  • measuring cup
  • measuring spoon
  • silicone cooking spoon
  • meat tenderizer or rolling pin

Ingredients for the graham cracker crust

  • 1 box Pamela’s Honey Grahams
  • 6 tbsp butter, melted
  • 4 tbsp sugar

Ingredients for the filling

  • 12 oz COOL WHIP Whipped Topping
  • 12 oz cream cheese, softened
  • 3/8 cup sugar
  • 1/2 cup Felix Lingonberry Jam

Instructions for the graham cracker crust

Place the graham crackers into a large ziploc bag.  Crush them with the flat end of a tenderizer or a rolling pin. (You could use a food processor if you prefer.)

Place the butter into a mixing bowl and melt it into liquid form in the microwave.

Add the crushed graham crackers and the sugar to the butter in the bowl and mix well.

Coat an 8×8 casserole dish lightly with nonstick cooking spray.

Place the graham cracker mixture evenly across the bottom of the casserole dish. Press down with a spoon to ensure that it is packed. I find this helps it stay together when slicing later.

Bake the crust for 10 to 12 minutes at 350 f.

Let the crust cool off before filling. I actually like to let it cool for a few minutes and then refrigerate it for about 10 minutes.

Instructions for the filling

Place cream cheese into a large mixing bowl and soften. (I microwaved for 2 minutes on half power.)

Add the COOL WHIP to the bowl and stir.

Add the sugar to the bowl and stir well.

Add the lingonberries and stir.

Pour cream cheese mixture on top of crust, smoothing with a spoon or knife.

Refrigerate until firm. It’ll be ready at 2 hours but will be better at 4.

Serve immediately.

  1. I don’t think I have ever tried lingonberries. My daughter, who has Celiac, would probably love this gluten free cheesecake. I like finding no bake recipes.

    1. They are a sassy little fruit! I’d think most berry based jams would work. Fruit alone would also work but wouldn’t “swirl” and really get into the cream cheese like a jam does though.

  2. This is my favourite way to make cheesecake. I learned it from my mom. She never did bake a cheesecake in a water bath, like the New York style. And, those berries are so delicious – I love that jam!

  3. This is fantastic – I can’t believe I actually have this very same Lingonberry Jam in the fridge right now! Normally being in the UK, I miss out on lots of American purchases but this one I can do. Now to find a substitute for cool whip…

  4. I’m like you in that we had lots of jams and jellies around all the time but never thought of using them outside of on top of toast or a bagel or in between peanut butter and bread. I want so much to try the lingonberry jams!

  5. I have never tasted lingonberry and I am really tempted to see how they taste. The recipe is so simple and I love that you have kept it very easy all along. I am very scared to bake cheesecake and this recipe is totally doable.

  6. I would really prefer to try that blueberry one first but they all sound really good. Lingonberries sounds right up my alley.
