Gluten-free Club Frittata #Recipe

Club sandwiches with ham, turkey, bacon and cheese are one of my faves. I’ve taken the club sandwich off of the bread and added eggs, turning it into a tasty Gluten-free Club Fritatta! Hubby and my youngest devoured it and there were no leftovers. Here’s how I made it.

  • 8 eggs
  • 1 tomato
  • 1/2 small onion
  • 4 slices deli ham
  • 4 slices deli turkey
  • 4 slices cheddar
  • 1/2 cup shredded bacon
  • salt and pepper to taste

Preheat the oven to 350.

Dice the tomato and onion. Cut the meats and cheeses into small pieces.

Add all of the ingredients to a large bowl and mix well.

Pour the contents of the bowl into the caldero and bake for 20 minutes.

Serve immediately with salt and pepper to taste.
