valmgs Gluten-free Meatballs Recipe

Over time my meatballs have evolved. I used to make two kinds, one regular and one gluten-free. Once I was able to make gluten-free meatballs that tasted good, I stopped making them the other way (not gluten-free). They’re quick and easy to make, and they smell and taste delicious.
VALMG’S GLUTEN-FREE MEATBALLS RECIPE
INGREDIENTS
- 2 lb. ground beef
- 2/3 cup instant mashed potatoes (several brands are gluten-free)
- 1 tbsp parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/3 cup bbq sauce or ketchup (I prefer the bbq sauce for a little more flavor)
- 2 large eggs
- 1 package onion soup (I used Lipton’s, it’s gluten-free)
INSTRUCTIONS
Preheat the oven to 400.
In a large bowl combine all ingredients.

form meatballs, rolling contents of the mix into 1.5-2 inch balls.

Bake at 400 for about 15-18 minutes.

That’s it.
Serve with your favorite sauce or gravy, and enjoy!

Oh my! I have seen so many gluten free recipes on here and it is a great relief! I have been thinking about switching my family to gluten free but worry that my son will not be interested. Seeing the meatballs and meaty mac and cheese was great! Thanks!

I like the addition of all the seasonings! Especially the garlic and the onion soup! It probably adds a lot to the overall taste! And with the addition of the eggs, it looks like you don’t have to use any oil or butter to prevent crumbling. Thanks for sharing! I’ll have to remember all the extras you put in as potential ideas to enhance taste.
