valmg’s Easy 3C Mashed Potato Pie Recipe

Sometimes I just don’t know what to call things. I usually just name something for the main ingredients I used. For this one I thought that chicken cheese corn mashed potato pie was a bit long and awkward, and so came the 3 c’s (chicken, cheese and corn). Anyway, here it is.
valmg’s Easy 3C Mashed Potato Pie Recipe
INGREDIENTS
- 1 lb ground chicken
- 4 oz nacho taco blend shredded cheese
- 1 packet taco seasoning
- 1 can corn
- mashed potatoes – either make 4 servings of instant mashed potatoes or use a 21 oz container like Country Crock
- 1 cup salsa
- 2 pie crusts
DIRECTIONS
Preheat oven to 350.
Place 1 pie crust into the bottom of the pie plate.
Brown the ground chicken.
Make the mashed potatoes in a medium or large bowl.
Place the browned chicken into the bowl and stir.
Add the corn into the bowl and stir.
Add the shredded cheese into the bowl and stir.
Add the salsa into the bowl and stir.
Add the taco seasoning into the bowl and stir.

‘Pour the mixture into the bottom pie crust.

Place the second pie crust on top and pinch to seal.
Here I prefer to spread a little soft butter or margarine on the crust for flavor and browning. Or you could use an egg wash.
Make a few puncture holes with a fork in the top crust.

Bake for about 35 minutes.

Let sit 5-10 minutes before cutting and serving.
